Have you ever heard of amlou? This delicious recipe from southern Morocco is a perfect replacement for industrial spreads, and it does not contain palm oil. In addition to being simple to make, its mixture of argan oil, almonds and honey is full of health benefits.
At breakfast, as a snack or to accompany mint tea, the place of amlou on Moroccan tables is undeniable. Spread on bread, pancakes or other Moroccan specialities, you will no longer feel guilty about dipping your spoon in it as its recipe combines the fine and sweet taste of honey and the argan oil and almonds feed your body with nutrients. Argan oil has antioxidant properties and is one of the richest foods in vitamin E. Almonds are a source of protein and fibre.
A classic recipe in three ingredients and three steps
A 200g jar of amlou requires about 150g of whole almonds, 60 ml of argan oil and 40 ml of honey. After roasting the almonds for about 20 minutes at 160°C, simply blend them into a smooth paste. From then on, your nostrils should be filled with the delicious smell of roasted almonds. Finally, all that remains is to gradually incorporate the argan and then the honey until you obtain a homogeneous consistency.
The amlou can easily be stored in an airtight box, in a cool, dry place, in the same way as a supermarket spread.
